Cacao Fermentation

The business of Dame Marie is Cacao. All Farmers plant some cacao with their Yams, Cocoye and Breadfruit. Haiti has several species, but all are known by two names, Cacao Haitian and Cacao Blanc.

The Grand Anse has little culture of Fermentation.  Group Anacaona has been buying Cacao by the pod and separating the two types to perfect a good fermentation and have complete quality control.   We have buyers in hand but are looking for a buyer that will be come to Haiti and be closely involved with the Group.


Our group concetrates on the Dame Marie river watershed from Mandou to Boucan and is in the process of USDA Organic certification.
